Actually the nature of all chips is not something very far from healthy. It’s just the methods used in production that denature the vegetables and strip them of their nutrients, often adding back in less than ideal artificial or unnatural ingredients for flavoring and preservatives to lengthen shelf life. Otherwise, chips can be just finely sliced vegetables that become crunchy and crispy when baked. It is a trick worth mastering as it results in the most delicious snacks!
This recipe looks very easy and it sure is when it comes to time and skill. The first important thing to master is the baking part and here it all depends on the oven. We highly recommend using a ventilator for faster and crispier chips but a regular oven will also do the work. Just watch how the veggies behave in the oven and adjust accordingly. It is important to keep the heat just below average 180˚ but rather 160˚ in order not to burn them or roast too quickly. If you are using a ventilator set the temperature at 140˚ and also keep an eye on them during the roasting. The edges roast faster than the center so it is natural to have some burnished and crispier edges. Cooking time will also vary depending on how thick you’ve cut your chips.

The other important aspect to have in mind is the nature of the oil used in roasting. Ditch all processed and hydrogenated plant oil here and opt for olive, avocado, almond, or extra virgin coconut oil. For the best option for baked and roasted goods you will want one with a high smoking point that’s stable when heated. Since these chips are cooked at such a low level of heat, you have multiple options to choose from. The oil you choose will influence the end flavor of your healthy chips.
Whatever you choose, definitely try all the varieties of vegetables that nature provides. You can make very delicious chips out of parsnips, regular or purple potatoes, carrots, apples, golden beets and even radishes. You can also add your favorite herbs like rosemary, thyme, basil, garlic or oregano for a flavored version of the chips. Do not forget to use high quality salt if you prefer your chips salty and always pack in an airtight container for optimum crispiness and taste.

1 sweet potato
Heart healthy oil or melted coconut oil
1. Rinse and peel the vegetables.
2. Slice them very thinly with a very sharp knife or a mandolin.
3. Place the slices on a baking tray lined with parchment paper.
4. Drizzle oil of choice or melted coconut oil on top.
5. Roast for 10-12 minutes at 160˚C until crispy.
6. If your oven has a ventilator turn it on and set the temperature at 140˚C.
6. Remove from the oven and let cool completely.
7. Serve with some homemade hummus, dip or enjoy plain.
Notes: You can also substitute with apple, parsnips, white potatoes, purple potatoes, carrots.
